Bistro Franz is a quaint bistro located at Veveří 14 in Brno. When you walk into the bistro, you immediately notice the pop of colors and the modern interior. The friendly staff greets you while you choose your table, and they will leave you with a few menus, which are available in English.
Their menu offers a variety of items that are sure to satisfy any customer, such as: coffee, wines, ciders, hot meals (risottos, duck thigh, chicken meals, ravioli, etc.) , soups, quiches, sweet and savory desserts, and much more.
There is a breakfast menu available all day which offers a smorgasbord of options.
The Foreigners.cz Brno team went to the bistro to experience the breakfast for ourselves.
The daily menu changes each week and the menu changes according to the season since the ingredients are always fresh. The afternoon & evening menu is served: Mon – Sat 21:30 am|Sun: to 20:30 pm
You can also take away newly bottled wines from the Hrdina a dcera winery at the cost of a winemaker.
We went to the meet with the owner, Radek Nozar to get to know him, and the ideas behind this extraordinary bistro.
Q: What inspired you to open the Bistro Franz?
A: There are a couple of reasons:
First of all, there wasn’t a place in Brno to go eat with kids and we wanted to create a place that was suitable to bring your kids and you could have a great experience with the entire family.
The next reason is that we wanted to make our dreams come true. The dream was to open a bistro in Brno that was similar to the bistro experience we had in Paris and Berlin. We wanted to renew the meaning of Bistro in the Czech Republic. In the Czech Republic bistro is often associated with fast food and poor quality. We wanted a place where you are going to have a quality meal for an affordable price.
Q: What makes Franz Bistro Unique?
A: Our main concept is that we are using ingredients that are seasonal, local, and fresh. We are one of the few restaurants in Brno that buy the majority of ingredients and products locally. We get the maximum amount of products possible from local farmers and producers, including our wines and ciders.
Furthermore, it’s not just about the local products, but supporting the local businesses and farmers. We can provide our feedback on the products, and also recommend what they should focus on during the next growing seasons. For example, we can tell them, ‘next year, I am able to take 1,000 eggs per week from you’ therefore, the farmer can account for that business when planning for the next year, and this is something they could not otherwise get from supermarkets.
We know that everything is grown organically, and that the local community and businesses are supported through our business.
There is a sense of trust between Bistro Franz and our customers. Our customers know that when we tell them our carps are from Pohořelice or our meat is from Mitrovský Dvůr that it is the truth.
Q: Where did you come up with the name Bistro Franz?
A: We were looking for a month for the right name. We finally decided on Bistro Franz after the Czech architect, František Pavlů who designed this building. He was a student of Art Nouveau in Vienna, and our bistro is in honor of his memory. We took the basic colors from the outside of the building and used them as the inspiration for the inside decor. Also, when we were renovating the inside of the building, we were able to chip away the paint and save the original paint on the ceiling.
Q: I know this is a hard question – but I am going to ask it anyways: What is your favorite dish?
A: Homemade ravioli with spinach
Q: Is there a favorite dish of the customers?
A: Since we make something different every day, and dishes rarely repeat, it is hard to say, but for example, our risotto with mushrooms is very popular, and our duck thigh, which is made in the traditional way – it is cooked in grease for a half of day at a very low temperature and served with red cabbage and dumplings.
Q: Favorite customer experience?
A: Two months after opening, an older couple, who were in the 80’s and appeared to be out of a fairytale, came into the restaurant. At this point I was still greeting every customer, and asking what he/she expects from our bistro.
They told me that “we come from Prague, and we read about you, and we needed to see for ourselves if what we read was true..” so, they sat down, they had lunch and wines, and even stayed to have dinner. After they finished, I went up to ask how it was, and they responded; “now we know what we read was true, and now we can return home to Prague.”
We have had many great experiences with our customers, but this was definitely the most special.
Q: Is there anything else you would like people to know about Bistro Franz?
A: We are not concerned or focused on a group of customers. We appreciate students, foreigners, workers, mums, dads, and everyone who comes here, and we show everybody the same quality service.
